摘 要:采用乌梅、杞果、山楂、藿香、菊花、紫苏、生姜、芦根、白茅根、甘草等10味亦药亦食之天然植物为主料,配以蜂蜜、低聚糖等辅料,研究并确定了一种碳酸型天然保健饮料的配方与加工工艺。通过一系列单因素试验和正交试验,确定了该饮料生产的最佳配方为:混合药汁30%、糖度9%、酸度0.12%、CO2气2.5倍;最佳杀菌工艺条件为:72℃常压条件下杀菌15min。按照本工艺生产的产品,质量稳定,风味独特,是一种营养丰富的抗疲劳天然保健饮料。10 natural plants of both food and medicinal properties,including dark plum,medlar,haw,Agastache rugosus,chrysanthemum,Fructus perillae,ginger,Rhizoma phragmitis,Cogongrass rhizome and licorice,were used as the main materials to make a natural carbonated health drink,with the addition of some other ingredients such as honey and oligosaccharide.Through a series of single-factor and orthogonal tests,the optimum formula and processing technology were determined.The formula included mixed medicinal juice 30%,sugar 9%,acid 0.12% and CO2 gas 2.5 times;and the optimal sterilization conditions were 72 ℃,15 min and normal pressure.The product obtained according to this processing technology was a natural anti-fatigue health drink featured by stable quality,unique flavor and rich nutrients.
