摘  要:采用高效液相色谱法测定豆类及豆制品中大豆异黄酮的含量。采用LC 20AT高效液相色谱系统,以甲醇∶水=5.5∶4.5(v/v)为流动相,检测波长为260nm,流速为0.8mL.min-1。待测组分与其他组分分离度良好,结果表明染料木苷、大豆黄素、染料木素线性范围分别为11.47-172μg.mL-1(r=0.9998),5.33-80μg.mL-1(r=0.9999),8.26-124μg.mL-1(r=0.9998),平均回收率分别为98.9%,98.7%,99.4%,相对标准偏差分别为0.3%,1.8%,2.9%。本试验结果对不同人群,根据各自需要选择豆制品具有一定指导作用。The content of soybean isoflavones in different bean products was determinated by HPLC. LC 20AT was used HPLC system: methanol:water=5.5:4.5 (v/v) was as mobile phase; Detection wavelength was 260nm and flow rate was 0.8mL.min^-1. Good separation of the conponents determined from other coexisiting concentration. The results showed that the genistin, daidzein and genistein perform a good linear relationship in the range of 11.47-172.0μg .mL-1 (r=0.9998), 5.33-80.01xg.mL-l (r=0.9999) and 8.26-124.0μg-mL^-1 (r=0.9998). The average recovery of 98.9% for genistin, 98.7% for daidzein and 99.4% for genistein with RSD's 0.3%, 1.8% and 2.9% respectively. The test resuits provided some guidance to diffident people to selecte soybean products according to their different needs.
