摘 要:探索Fenton-亚甲基蓝光度法测定保健品清除羟自由基能力的新方法。在酸性条件下Fenton试剂与亚甲基蓝反应使亚甲基蓝褪色,吸光度降低,加入保健品样品后亚甲基蓝褪色程度降低,降低程度与保健品清除羟自由基的能力有关。由此建立一种分光光度评价保健品抗氧化活性的新方法,将该方法用于5种市售保健品对羟自由基清除率的测定,结果满意。A new method for determination of the scavenging hydroxyl radical ability of health care product was investigated.It was showed that methylene blue faded when reacting with Fenton reagent in an acidic media,and the spectrophotometric absorbance of the solution decreased.The extent of absorbance variation reduced when health care product was added to the solution.The degree of the absorbance reduction was related to the scavenging hydroxyl radical ability of health care product.Based on this,a new method for determination of antioxidant activity of health care products was established.This method was used to the determination of hydroxyl radical scavenging rate of five kinds of health care products obtained from the market with satisfactory results.
