摘 要:目的了解北京市居民对食品添加剂的认知情况,为食品安全健康教育与健康促进工作提供依据。方法采用分层方便抽样方法,抽取北京市城八区38个街道共1700名居民进行自填式问卷调查。结果调查对象对食品添加剂的总体知晓率平均为(53.18±15.02)%。分别有59.2%、74.5%的人认为苏丹红、三聚氰胺属于食品添加剂;44.3%的居民对使用合法添加剂的态度为赞成,90%以上的居民对超量使用合法食品添加剂以及对使用非法食品添加剂的态度为反对,75.2%的居民认为我国食品添加剂管理制度与管理措施不完善,28.1%的居民在购物时经常会尽量挑选不含食品添加剂的食品。多因素非条件Logistic回归分析结果显示,城市居民、文化程度高、大学时所学专业为农医类是影响居民食品添加剂知晓率高低的保护因素。结论北京市居民对食品添加剂的知晓率还不是很高,居民对合法使用的食品添加剂的正性态度较低,对非法使用的非食品添加剂的知晓率亦较低。今后应加大食品添加剂健康教育,引导居民正确对待食品添加剂。Objective To analyze knowledge, attitude and behavior related to food additives, and provide evi- dence for implementing food-security health education. Methods A self administered questionnaire was conducted in 8 urban areas of Beijing. Totally 1700 of respondents were enrolled by using stratified random sampling method. Results The average of awareness rate of basic knowledge related food additives among those respondents was (53.18 + 15.02) %. About 59. 2% and 74. 5% of respondents thought that tonyred and tripolycyanamide belong to food additives. About 44. 3% of respondents agreed with using the legal food additives, more than 90% of respondents opposed using illegal food addi- tives, about 75.2% of respondents thought that the management system and measure on food additives in China were not enough, and 28. 1% of respondents reflected they often bought foods without food additives. The result of unconditional logistic regression indicated that urban respondent, higher educational level and profession learned in college were protective factors. Conclusion The awareness of food additives in those respondents was poor, and their positive attitude on using legal food additives was low. It should be strengthened on food additives education so as to help people treat food additives correct attitude.
