摘  要:[目的]研究和比较桑椹红色素的不同定量分析方法。[方法]以酸性乙醇溶液提取桑椹红色素,并用大孔树脂对其进行初步纯化。分别利用色价法、消光系数法、pH示差法和NaNO2-Al(NO3)3比色法测定桑椹花青素的含量。[结果]纯化后色素的色价是纯化前的14.8倍;消光系数法测得桑椹红色素中花青素含量为0.015%;pH示差法测得其含量为0.017%;比色法测得含量为0.007 6%。[结论]pH示差法测定桑椹花青素含量较为准确。[ Objective ] The aim was to study the quantitative analysis of mulberry red pigment. [ Method ] Mulberry red pigment was extracted by using acid alcohol and macroreticular resin was purified. The pigment content was analyzed by color value method, extinction coefficient method, pH differential method and NaNO2-A1 ( NO3 ) 3 method, respectively. [ Result ] The purified pigment was 14.8 times the color value of unpurified one. The mulberry red pigment content measured by extinction coefficient method was 0. 015%. The one measured by pH differen- tial method was 0. 017%. The one measured by NaNO2-A1( NO3 ) 3 method was 0.007 6%. [ Conclusion] pI-I differential method was more ac- curate for the quantitative analysis of n^ulberry anthocyanins.
