摘  要:目的对海南苦丁茶叶中微量元素的含量及挥发性成分进行分析研究。方法用原子吸收光谱法测定Ca,Fe,Mn,Cu,Zn,Mg,Pb,Cd的含量;利用水蒸气蒸馏法提取苦丁茶叶中挥发性成分,用GC-MS进行成分分离鉴定,应用色谱峰面积归一化法确定各成分的相对百分含量。结果 3种等级苦丁茶叶中均呈现出Ca、Mg》Mn>Fe、Zn>Cu>Pb、Cd的分布,但各等级苦丁茶叶中同种元素的含量差异较大,且其含量与等级之间无明显规律;一级苦丁茶叶的挥发性成分中共鉴定出18种化合物,主要成分为:正十六酸、十八碳烷酸、6-甲基-2-庚醇和3,7-二甲基-1,6-辛二烯-3-醇等。结论获得了不同等级苦丁茶叶中微量元素含量的比较数据,并测定了一级苦丁茶叶中挥发性成分,为海南苦丁茶的深入开发利用提供一定依据。Objective To analyze and study the contents of trace elements and volatile components of Kudingcha in Hainan. Methods The atomic absorption spectrometry was used to determine the contents of Ca,Fe,Mn,Cu,Zn,Mg,Pb and Cd.Volatile compounds of Kudingcha were extracted by steam distillation,and analyzed by GC-MS.The relative percentage was defined via chromatographic peak area normalization method. Results Three levels of Kudingcha showed the distribution of Ca,Mg 》 Mn Fe,Zn Cu Pb,Cd,but the difference of contents of the same element in different degrees of Kudingcha were quite distinct,and there was no significant law between content and level.Eighteen compounds were identified in volatile components of first-degree Kudingcha,whose main components were n-hexadecanoicacid racid,octadecanoic acid,2-Heptanol,6-methyl-,1,6-Octadien-3-ol,3,7-dimethyl-ect. Conclusion The comparative data of the trace elements contents in different degrees of Kudingcha and volatile components in first-degree Kudingcha were determined in this experiment,which supplied scientific grounds for further exploitation and development of Kudingcha in Hainan.
