摘　　要：醋酸菌在食品和饮料的工业生产以及工业化学品的生物转化中都起着重要作用。综述了醋酸菌在生物转化生产醋、可可、纤维素、D-塔格糖和莽草酸中的应用,指出随着新理论、新方法、新技术的发展,醋酸菌在食品生产、制药、生物传感器、精细化工、替代能源等更多方面的应用成为可能。The acetic acid bacteria （AAB） have the important roles in food and beverage production, as.well as in the bio- production of industrial chemicals. To review the biotransformation applications of AAB in the production of vinegar, cocoa, cellulose, D-tagatose and shikimate. And new theories, methods and technologies will further expand the potential use of AAB in various fields of biotechnology, such as food production, pharmaceuticals, bio-sensors, fine chemicals, al- ternative energy ,and so on.
