摘 要:本文旨在研究基础日粮中添加微生态制剂对樱桃谷鸭肉品质、肠道菌群及其圈舍内NH3浓度的影响。选取1日龄樱桃谷鸭750只,随机分为五个处理组分别为:对照组Ⅰ和试验Ⅰ组(500g/t)、试验Ⅱ组(1000g/t)、试验Ⅲ组(1500g/t)、试验Ⅳ组(2000g/t),每个处理设3个重复,每个重复50只。42日龄时,分别测定其胸肌的pH、水分含量、蛋白含量、脂肪含量,鸭舍氨气浓度和肠道菌落指数。结果表明:各实验组的肉鸭肌肉品质性状优于对照组(P<0.05),且试验Ⅱ组(添加量1000g/t)添加效果最佳;试验Ⅱ组(添加量1000g/t)的肉鸭肠道大肠杆菌菌落指数、沙门氏菌指数以及舍内氨气浓度均低于对照组,且大肠杆菌指数差异和舍内氨气浓度差异达显著水平(P<0.05)。由此可见:微生态制剂能够有效地提高肉鸭的肌肉品质;能有效地降低圈舍内氨气浓度和大肠杆菌菌落指数,减少环境污染。To study the effect of probiotics on the meat quality,intestinal microflora and NH3 concentration in house,750 Cherry Ducks at the age of one day were randomly dividedinto 5 treatments:control group Ⅰ and test Ⅰ(500 g/t),test Ⅱ(1 000 g/t),test Ⅲ(1 500 g/t),test Ⅳ(2 000 g/t).Every treatment has 3 replications,each replication included 50 ducks.The pH value of pectoralis,the amount of water,protein and fat,the concentration of ammonia in duck house and the index of intestinal microflora were tested respectively at 42 days of age.The results showed that quality of meat duck muscle in every test group was superior than those in control group(P0.05),and the result of test Ⅱ group(addictive amount 1 000 g/t) was the best;the index of meat duck's Escherichia coli colonies in intestinal tract,the index of salmonella and the concentration of ammonia in duck house of test Ⅱ group were all lower than those of the control group,in addition,the difference of the index of Escherichia coli and the difference of the amount of ammonia in the house reach the point of significance(P0.05).It can be seen that probiotics can effectively improve the quality of meat duck muscle,and effectively reduce the amount of ammonia in the house and the index of Escherichia coli colonies as well as the pollution of the environment.
