摘　　要：禽流感对食品安全的影响是巨大的,是影响肉食品安全的重要风险因素。论文从禽流感对家禽养殖业发展的影响、通过食品链条对人类健康造成危害、重大食品安全事故影响国际贸易和企业发展三方面论述了禽流感对食品安全的影响。阐明了认清禽流感的病原并掌握正确的防范措施,采取切实可行的对策,依靠实用有效的科学技术,就一定能成功地防止禽流感可能造成的重大食品安全事故,避免经济损失和社会影响,保证国民经济健康地向前发展。Avian influenza has the enormous implications on food security.It is the significant risk factor for food safety of meat.In this paper,three aspects were discussed： avian influenza＇s implication on the development of poultry raising;avian influenza to human health hazards through the food chain;significant food safety incidents affecting the international trade and business development.By means of these three aspects,the effects of food safety from avian influenza were analyzed.The paper also illustrated avian influenza＇s etiology clearly.And if we master the proper precautions,take the practical measures,and rely on the effective science and technology,avian influenza will be controlled successfully.This can avoid the economic losses,and thus ensure the national economy development.
