摘  要:从江苏沿江地区5个县(市)和1个农场抽取了有代表性的弱筋小麦样本14份,并进行了品质分析。所有样本都具有较高的容重(>790 g/L)。在4个弱筋小麦品种中,仅宁麦9号符合优质弱筋小麦国家标准,而宁麦13、扬麦13和扬麦15的品质指标不协调,扬麦13品质性状的稳定性较差。如东县和泰兴市弱筋小麦的品质性状优于其他县(市)。抽样材料的硬度、溶剂保持力、吹泡仪参数及粉质仪参数之间存在高度相关性。The quality traits of 14 representative weak-gluten wheat samples collected from 5 counties(cities) and one farm along the Yangze River in Jiangsu province were investigated.All samples had high unit weight(790 g/L).Among 4 weak-gluten wheat varieties,only Ningmai No.9 conformed to the national standard of high-quality weak-gluten wheat,while the others were inferior in some quality indexes,and Yangmai 13 had worse stability in quality traits.The quality traits of weak-gluten wheat in Rudong county and Taixing city were better than those in other counties(cities).Highly significant correlations were found among kernel hardness,solvent retention capacity,alveograph parameters and farinograph parameters of the sampled materials.
