摘　　要：壳聚糖是一种来源广泛、无毒无害、具有生物相容性的可生物降解天然高分子材料,具有良好的成膜性和一定的抗菌性。综述了壳聚糖及其衍生物抗菌膜的制备方法、物理性能、抗菌性及在食品保鲜和医药方面的研究进展,提出了其中的不足之处,并对其未来研究进行展望。Chitosan is a kind of natural polymer material largely widespread in the natural. Chitosan exhibits nontoxic, biodegradability and biocompatibility. It shows good film-forming properties and some antimicrobial activity. The preparation, physical properties and antimicrobial of chitosan with its derivatives membranes have been related. Among the paper, the films applying in food preservation and medicine were discussed in details. At the same time, the disadvantages of cbitosan films and the study in future were pointed out.
