摘 要:本文以2011年湖南省质量技术监督局对地州市各食品生产加工企业定期抽检公布的数据为例,进行抽样不合格批次数量与总抽样批次总量统计分析;统计结果表明:2011年全年全省食品平均抽检合格率为94.01%;地州市食品抽检合格率差异较大,质量安全不均衡;湖南传统食品,如熟食、豆制品、槟榔等,存在菌落总数超标、超量和违规使用食品添加剂等安全隐患。According to periodic sampling data of adminstrative districts food production and processing enterprises in 2011 by Hunan Bureau of Quality and Technical Supervision, the unqualified batch number and the total sample batches were statistical analyzed in this paper. The statistical results showed that the average pass rate of the food sampled from the whole province in 2011 was 94.01%. The pass rate of food sampled from adminstrative dislricts varied significantly. For the detected traditional foods of Hunan province, the total number of colonies exceeded the limits and the excessive and illegal use of food additives were also found.
