摘  要:本试验以138日龄和168日龄清远麻鸡为研究对象,测定其屠宰性能和肉质指标。结果表明,138日龄和168日龄清远麻鸡产肉性能均良好,屠宰率和全净膛率分别为92.11%、64.76%及91.72%、65.62%(P>0.05);半净膛率138日龄显著低于168日龄,但腹脂率138日龄显著高于168日龄(P<0.05);氨基酸总量138日龄比168日龄高,胸肌比腿肌高(P>0.05);剪切力138日龄极显著低于168日龄(P<0.01),但失水率和蒸煮损失138日龄显著高于168日龄(P<0.05);腿肌失水率和蒸煮损失显著或极显著低于胸肌,肉色和pHu极显著高于胸肌(P<0.01)。Slaughter performance and meat quality were compared at 138 and 168 days of age in Qingyuan partridge chickens in this study. The results indicated that Qingyuan partridge chickens had good meat. performance at both stages. The average carcass dressing percentage and the percentage of eviscerated yield was 92.11%,64.76% and 91.72%, 65.62% at 138 and 168 days of age,respectively. The percentage of half eviscerated yield at 138 days of age was lower than that at 168 days of age,but the abdominal fat rate at 138 days of age was higher than that at 168 days of age (P〈0.05). The content of total amino acids at 138 days of age was slightly higher than that at 168 days of age, the content of total amino acids in breast muscle was: higher.than that in leg muscle (P〉0.05). Shearing force of breast muscle at !138 day6 of age was lower than that at 168 ~lays of age (P〈0.01),but water loss rate and cooking loss was higher at 138 days of age compared with at 168 days of age (P〈0.05). Water loss rate and cooking loss in leg muscle was lower than those in breast muscle (P〈O.05), respectively. Meat color and pHu of leg muscle was higher than those of chest muscle (P〈0.01) ,respectively.
