摘　　要：乳制品供应链包括牛奶的生产、加工、销售、消费诸环节。解决好乳制品供应链中各环节的质量安全问题,对于提高乳制品质量具有重要意义。通过分析乳制品供应链涉及的各个环节发现,影响乳制品质量安全的因素主要来源于原料乳质量、乳制品加工、流通及消费者安全意识四个方面。确保乳制品的质量安全,必须抓好乳制品供应链中各个环节的质量安全问题。The supply chain of dairy products includes four steps： the production, processing, sales and consumption. It is significant to solve the safety problems throughout these steps for improving the quality of dairy products. By analyzing every step of the supply chain, factors influencing the quality safety of dairy products are found in terms of the raw milk quality, the processing, circulation and the consumers＇ safety consciousness. Great attention must be paid to the quality safety of every step of the supply chain to ensure the final quality of dairy products.
