摘 要:利用基因工程技术已经成功培育出抗虫、抗病、抗逆、耐除草剂和改善营养品质的转基因水稻,其安全性问题成为研究热点。对转基因水稻上市前进行严格和科学的安全性评估是当前一个亟待解决的课题,其中一项重要内容是评估转基因食品的致敏性。对当前国内外水稻过敏原的研究、对转基因食品潜在致敏性的安全性评价以及加工处理对致敏原的影响等研究进展进行了综述。As genetically modified rice, like insect and disease resistance, stress resistance, herbicide tolerance and improved nutritional quality, and so on, had been successfully produced by genetic engineering techniques, the security issues became a research focus. Safety assessment of transgenic rice pre-market has been a rigorous and scientific problems to be solved, an important part of which was to assess the allergenicity of genetically modified foods. The current domestic and international research on rice allergens, safety evaluation on the potential allergenicity of genetically modified food, and the impact of al- lergen processing research were reviewed.
