摘 要:研究了脂肪酶生物催化法选择性合成蔗糖-6-棕榈酸酯及其性能.蔗糖-6-棕榈酸酯的转化率为94%,产物的结构经1 H-NMR确证.测定了产物蔗糖-6-棕榈酸酯的水溶性、亲水亲油平衡值(HLB)、表面张力(CMC)以及泡沫性能和乳化性能等.结果显示其具有很好的水溶性,HLB=16.11,CMC=24.8mg/L,γCMC=35.78mN/m,泡沫和乳化性能在实验浓度范围内呈一定的规律.抑菌试验表明该蔗糖-6-棕榈酸酯对大肠杆菌、金黄色葡萄球菌、枯草芽孢杆菌均无明显抑菌效果.The properties of 6-O-palmitoylsucrose biocatalysized by lipase were studied. The 6-O- palmitoylsucrose purified by column chromatography had a higher percentage of monoesters (94%). The 6-O-palmitoylsucrose was identified by 1^H-NMR techniques. The surfactant properties of 6-O-palmitoylsucrose which contains the hydrophilic-lipophilic balance(HLB), foam properties, emulsion properties and the critical micelle concentration(CMC) were determined. The result showed that the 6-O-palmitoylsucrose has good solubility in water with the hydrophilic-lipophilic balance (HLB) value of 16. 11. The result of determination of surface tension is CMC=24.8 mg/L, YCMC= 35. 78 mN/m by Du Nouy. The foam and emulsion show a certain regularity in the full range of experimental concentrations. The antimicrobial activities of 6-O-palmitoylsucrose were tested by Escherichia coli, Staphylococcus aureus and Bacillus subtilis. , and the result showed that the monoester had no antibacterial activity apparently.
