摘　　要：对食用氢化油在糖果、焙烤食品、煎炸食品、冷饮、仿乳制品、预制产品中的应用进行了综述 ,并对不同用途的氢化油的制备方法作了简单介绍。The uses of edible hydrogenation oils and fats in confections,bakery and frying products,ice,nondairy and preparatory food are described.In this paper productive metheds of various hydrogenated oils and fats are briefly intruduced.
