摘  要:利用差示扫描量热仪(DSC)研究了测试条件对淀粉糊化测试结果的影响,为淀粉糊化研究提供了参考。对DSC测试条件(平衡时间、样品量、升温速率、淀粉颗粒粒径、含水量)进行筛选,优化了测试条件。对优化测试条件进行重复性实验,得到t0、tp、ΔH的RSD分别为0.2%、0.26%、0.15%。结果表明该测试方法精密度高,重复性好。The influence of the test conditions on the test results of starch gelatinization was investigated by using differential scanning calorimetry (DSC) in order to provide the reference for studying starch gelatinization. The test conditions such as balance time, sample amount, heating rate, starch particle size, water content, etc. were selected and optimized. The repetitive experiments for optimizing test conditions were carried out. The obtained RSD of to, tp, AH is 0.2%, 0.26% and 0.15% respectively. The results show that the test method has high precision and good repeatability.
