摘  要:目的了解某省大学生膳食营养和健康教育现状,以指导和干预大学生膳食营养结构和健康教育。方法采用分层整群抽样、记账和称重法、实验室检测等方法对1 023名广东大学生进行连续2年每年5 d的膳食营养监测和营养知识问卷调查。结果总能量摄入量完全达标,超过中国居民膳食营养素参考摄入量(RNI),女生超标尤为明显(达RNI的124.61%);三大营养素供能比例基本合理,硫胺素、铁等摄入充足,但维生素C、钙、核黄素、优质蛋白质、早餐热量摄人量不足。缺铁性贫血发病率仍高达5.65%和8.33%(男、女),对营养知识了解和重视并付诸行动的大学生达90%以上。结论该省大学生膳食监测与干预强度及广度不够,应加强营养指导和干预。Objective To understand the status of diet and nutrition of college students in a province so as to improving the guidance and intervention of dietary structure and health education. Methods A total of 1 023 college students were selected by the stratified cluster sampling method and investigated with the accounting and weighing method and laboratory tests 5 days per year for 2 years. Results The total energy intake was completely standard, and more than that of the Chinese dietary recommended nutrient intake (RNI). The RNI of female college students was excessive particularly, coming up to 124.61%. The proportion of three major nutrients was reasonable. Thiamine, iron, etc were adequate. However, ascorbie acid, calcium riboflavin, high quality protein, and breakfast calories intake were inadequate. The incidences of iron deficient anemia were still high (5.65% in man and 8.33% in woman). More than 90% of the students understood the nutrition knowledge and put into action. Conclusions Among the college students of the province, the strength of the dietary monitoring and intervention is not enough, and should be strengthened.
