摘 要:通过测量不同浓度的柠檬酸水溶液的滴定酸度oT和pH,制作柠檬酸浓度与pH值和滴定酸度的变化曲线,并得到滴定酸度,pH与柠檬酸的回归方程,分别为y=152.5x-3.321 4(R2=0.993 9),y=-0.404ln(x)+2.173 1(R2=0.995 7)。其次,通过添加柠檬酸钠调节pH值,得到柠檬酸钠与柠檬酸百分比(M)与pH值的回归方程,当水溶液的pH值介于3.5~4.5,不同浓度的柠檬酸溶液的M值介于0.35~0.6。在此基础上研究了柠檬酸钠和柠檬酸在酸牛奶饮品中的应用,为生产时计算柠檬酸或柠檬酸钠的添加量提供数据基础,酸牛奶饮品pH 3.6~4.0,M值在0.25~0.5。In order to determine and calculate the quantity of citric acid and sodium citrate in the production of yoghurt drinking,the titration acid degree oT and pH of citric acid and sodium citrate in water solution and yoghurt drinking were tested,and the curves were figured out and data were provided.The regression equations among titratable acidity,pH and citric acid concentration are y=152.5x-3.321 4(R2=0.993 9) and y=-0.404ln(x)+2.173 1(R2=0.995 7)),respectively.Besides,the regression equations between the value of M and pH are given,respectively.When pH changes in the range of 3.5-4.5,the value of M always changes in the range of 0.35-0.6 no matter what the citric acid concentration is.Based on all this,it is concluded that the value of M changes in the range of 0.25-0.5 when pH changes in the range of 3.6-4.0.
