摘  要:为了培养学生食品质量分析与检测的职业能力,以项目化任务驱动方式对《食品分析与检测技术》课程进行教学改革。在对工作任务与职业能力分析的基础上,以具体的检测项目为载体训练的学生能力,并将食品分析与检测方法等理论知识内容渗透到项目训练的过程中。从调味品、蜂蜜、肉制品和果蔬制品为主体对象,通过项目化教学,使同学们具有常见食品的质量分析检测的职业能力。让学生在实践中学习,在学习中实践,使学生不断提高职业竞争能力。In order to develop students' professional abilities, teaching reform was carried out in the course of Food Analysis and Test Methods by adopting project - based task - driven teaching mode. Based on analysis of task and professional abilities and taking speeifie projects as carrier, the theory knowledge of food analysis and test methods was penetrated through the procedure of the projeet training. Students got chances to know the professional abilities of common food quality analysis and testing by taking soybean sauce, honey, meat products and vegetables as examples. Students could improve their professional competitiveness by learn- ing from practice and putting theories into practice.
