摘 要:屠宰加工企业作为优质猪肉供应链的核心企业,其质量安全认知与行为对于保障猪肉质量具有重要作用。文章利用来自山东省等9省份的522份调查问卷,利用频数分析法从事前、事中和事后3方面分析了核心企业关于质量安全的认知与行为。研究结果表明:受访核心企业的质量安全认知水平普遍高,但其质量安全行为仍存在诸多不足。为进一步提升核心企业的质量安全认知与行为水平,政府应加大宣传教育力度、加强监管、提高市场效率;屠宰加工企业应响应政府号召,规范自身行为。The quality safety awareness and behavior of slaughter and processing enterprise which is the core enterprise of high- quality pork supply chain play an important role in improving pork quality safety. Based on 522 questionnaires from 9 provinces, this paper analyses quality safety awareness and behavior of core enterprise from 3 aspects which are the beforehand, the concur- rent and the afterwards. The results show that: the quality safety awareness level of surveyed enterprises is generally high but there are many shortages in quality safety behavior level. In order to improve the level of quality safety awareness and behavior the government should strengthen the propaganda, increase the surveillance dynamics and make markets more efficient and slaughter and the processing enterprises should response the call of government and regulate their own behavior.
