摘　　要：赤藓糖醇是一种填充型甜味剂,具有热值低、口感清凉、食用安全、结晶性好、非致龋齿性及对糖尿病人安全等特点,应用前景极为广泛。介绍了赤藓糖醇的理化性质和生理特性以及在食品工业中的应用。Erythritol is a kind of adding sweetener with lower heat,cool feeling and food safety,good crystallization,never lead to dental caries,safety for the diabetes patient, so it have a wide application foreground. Erythritol physical and chemical properties,physiological function and application in food industry were introduced.
