摘 要:地沟油在中国的泛滥对社会、人类健康的危害越来越大,但目前仍然没有一种可靠权威方法鉴别地沟油及煎炸老油。在总结以往地沟油检测方法的同时,从物理学角度对地沟油及煎炸老油的物理及微观特征进行了简单的分析。实验发现,食用油在使用之后,由于其物理和化学性质发生了改变,使得油滴在微观状态下呈现出不同的形状,并在此基础上提出一种新的鉴别方法——乳化镜检法。该方法简便快速、成本极低,且具有几乎无法通过技术手段达到扰乱乳化镜检的优点,具有很强的实用性。The abuse of illegal cooking oil harms human health is more and more seriously in China.However,there is no one reliable method can well identify illegal cooking oil and fried oil.This paper summarized the detection methods of illegal cooking oil,analysing the physicochemical characters of illegal cooking oil and fried oil.In the test,it is found that the physical and chemical properties of the edible oil had changed when the edible oil had been cooked,which makes the oil present a total different shape.Then a whole new identification method called emulsification microscopic examination method was raised in term of this theory.This method,having the advantages of easy operation and less spending,nearly can not be disturbed by technical method.Therefore,this method possesses a very strong practical applicability.
