摘 要:采用2倍体积乙酸乙酯萃取葡萄酒样并将其浓缩至原酒样体积的1/100,用C18色谱柱,甲醇∶水=5∶5为流动相,可以将白藜芦醇的色谱峰较好的分离出来;以反式白藜芦醇(Sigma)为标样,分别测定了不同产地和品种的葡萄酒样品中的白藜芦醇含量,并分析了葡萄酒中的白藜芦醇含量与各种环境因素的相关性。结果表明,新疆、昌黎、德钦酿酒葡萄产区的赤霞株干红葡萄酒具有较高的白藜芦醇含量;葡萄酒中的白藜芦醇含量与产区的海拔呈显著相关。Ethyl acetate (its volume 2 times of wine samples) was used to extract resveratrol and the extract was condensed to 1/100 of original wine sample volume. Then C 18 reversion phase chromatography column was used and methanol: water = 5:5 used as mobile phase to separate chromatographic peaks of resveratrol.By using trans-resveratrol (Sigma) as the standards, resveratrol content in grape wine samples of different production places or of different varieties were determined respectively, and the correlation between resveratrol content in grape wine and various environmental factors were analyzed. The results suggested that grape wine from turpan (Xinjiang province), Changli (Hebei province) and Deqin (Yunnan province) had relatively higher content of resveratrol, which proved that resveratrol content in grape wine was closely related to the lati- tude of wine-making places.
