摘  要:以烤烟品种云烟87中部叶和上部叶为试验材料,研究密集烤房3种装烟密度(42.09 kg/m3、56.12 kg/m3和70.15 kg/m3)对烤后烟叶香气质量的影响。结果表明,密集烤房适当增加装烟密度能在一定程度上增加烤后烟叶类胡萝卜素降解产物、类西柏烷类、美拉德反应产物、新植二烯及其香气物质总量,但苯丙氨酸类有所减少;中部烟叶以装烟密度56.12 kg/m3时烤后烟叶新植二烯和香气物质总量最高,其余香气物质含量略低于70.15 kg/m3;上部烟叶随着装烟密度的增加,香气物质总量有升高的趋势,以装烟密度70.15 kg/m3时香气质量改善效果最好。Effects of three kinds of loading density (42.09 kg/m3 ,56.12 kg/m3 and 70.15 kg/m3) on a- roma components of flue-cured tobacco leaves were studied by using middle and upper leaves of tobacco culti- var Yunyan 87 in bulk curing barn. The results showed that, the products of degraded carotenoid, cemdrenoid and maillard reaction, neophytadiene and total content of aroma components 9ould increase to some extent by increasing the loading density appropriately in bulk curing barn, but products of phenylalanine decreased. With the loading density of 56.12 kg/m3, the middle leaves had the highest the neophytadiene and total con- tent of aroma components, and their content of other aroma components were lower than that of the leaves with the loading density of 70.15 kg/m3. With the increasing of loading of the upper leaves were on the rise. With the loading density of 70. density, the total content of aroma components 15 kg/m3, the aroma quality was the best.
