摘  要:黑粒小麦是中国近几年育成的一类新品种,其富含丰富的天然黑色素和营养价值。为了从黑粒小麦中提取天然色素并研究其理化性质,以黑粒小麦为材料,对它进行天然色素的提取及色素稳定性质进行研究。结果表明,天然黑色素易溶于水、乙醇等极性溶剂,为水溶性色素;在酸性条件下呈现红色,碱性条件下为绿色;黑粒小麦色素较耐热(<80℃);Ca2+、Ba2+、K+、Fe3+、Al3+、Cu2+、Mg2+这些金属离子对该色素都有一定的增色作用,但Ba2+、Al3+、Fe3+使其有沉淀出现;Vc、H2O2使色素色泽变浅,NaHSO3对色素有较强的褪色作用;食盐、蔗糖、柠檬酸对黑粒小麦色素有增色的作用。由此得出,黑粒小麦色素的理化性质比较稳定,是较理想的天然色素添加剂。Black-grained wheat is a new variety of wheat developed in China in recent years, and it is rich in natural melanin with highly nutritional value. In order to extract the pigment of. black-grained wheat and research its physicochemical property, we extracted the pigment and research the stability of that. The results showed that, the pigment was soluble in water, ethanol and other polar solvents, while it was a kind of water-soluble pigment. And it showed red under acidic conditions, green under alkaline conditions. The black pigment of wheat grain was good heat (〈80~C). Metal ions such as Ca2~, Ba2~, K~, Fe3~, A13~, Cu2~, Mg2~ had a certain elegance to the role of pigment, but Ba2+, A13+, Fe3~ there appear to precipitate. Vc, H202 made the pigment color lighter, NaHSO3 fade the pigment had a strong role. Salt, sugar, citric acid on the black pigment of wheat grain had hyperchromic effect. Therefore, the physicochemical properties of the pigment of black-grained wheat were stable. The result also implied the pigment was an ideal and natural color additive.
