摘 要:为研究冷藏陈列柜内食品包温度和室内环境因素之间的关系,本文应用数值模拟方法研究不同的风幕出口速度、室内温度和相对湿度对冷藏陈列柜内食品包温度分布的影响,并考虑辐射传热和传质对食品包温度分布的影响。数值计算结果表明:光照使前排食品包温度提高0.1~1.2℃;在所研究范围内,随着风幕出口平均速度升高,食品包温度降低,而随着室内温度和相对湿度的升高,食品包温度升高。风幕出口冷风平均速度每升高0.15m/s,柜内食品包温度降低0.2~1.1℃;当室内温度每升高2℃,食品包温度升高约0.3℃;室内相对湿度每升高20%,食品包温度升高约0.9℃。本研究可为食品质量的研究和冷藏陈列柜的优化设计提供参考。In order to study the relation between the food package temperature and ambient environment, the food package temperature at the different evaporator outlet velocities, ambient temperatures and relative humidity is investigated by numerical simulation. In the present computation, the influence of mass transfer and radiation are considered. The computational results show that the front and top food package temperature rises 0.1 - 1.2℃ due to light. At the investigated range of this paper, the food package temperature decrease as the air curtain velocity increases, but the food package temperature also increases with increasing of ambient temperature and humidity. At the same time, the food package temperature rises 0.2 - 1.1 ℃ when air curtain outlet velocity increased by 0.15m/s. The food package temperature rises about 0.6℃ when ambient temperature increases by 2℃. The food package temperature rises about 0.9℃ when ambient humidity increases by 20%. Therefore, the study can provide the reference for the design of refrigerated display cabinet.
