摘  要:目的了解亚硝酸盐在市售熟肉制品中的污染情况和健康风险。方法分析2008年上海市售熟肉制品中亚硝酸盐污染监测资料,结合膳食摄入数据,运用蒙特卡罗方法进行膳食暴露值估算,以亚硝酸盐的ADI值为参考对本市居民通过肉制品摄入的亚硝酸盐进行定量的风险评估。结果上海市售熟肉制品亚硝酸盐超标率为2.75%,平均检出值为0.008g/kg;其中散装酱卤肉类超标较严重,总体超标率为3.48%,牛羊肉制品超标较多,超标率分别为7.47%和4.88%。普通居民通过熟肉制品每日摄入亚硝酸盐量大于0.07mg/kg·bw(ADI)的概率为4.81%。结论上海市售熟肉制品中亚硝酸盐残留既有导致极少数人急性中毒的风险,也有导致部分人群(约4.8%)受到亚硝酸盐的慢性毒害的风险,应大力宣传有关亚硝酸盐的知识,加强监管和抽检力度。OBJECTIVE To understand the contamination status of nitrite in cooked- meat products and assess its daily intake through cooked- meat products in Shanghai. METHODS Surveillance data of nitrite in cooked-meat products in 2008 were col- lected and analyzed. Daily intake of nitrite through cooked-meat products was calculated by Monte Carlo simulation on dietary intakes and nitrite contamination data in Shanghai. ADI of nitrite was also used to assess the risk of nitrite in cooked- meat products on Shanghai inhabitant. RESULTS The average level of nitrite in Shanghai cooked- meat products was 0.008g/kg and 2.75% products were beyond the MRLs. In addition to that 3.48% of cooked- meat products in bulk were beyond the MRLs. Beef and mutton products were the two highest products beyond the MRLs (7.47% and 4.88%). 4.81% of the Shanghai inhabitants' Daily intake of nitrite through cooked- meat products were beyond the ADI of nitrite (0.07mg/kg.bw). CONCLUSION The residue of nitrite of cooked- meat products in Shanghai Markets not only can cause acute poisoning on a very few people, but also can lead chronic toxicity to some people (4.8%). Everyone should be told the knowledge of nitrite and cooked- meat prod- ucts should be inspected and sampled to detect nitrite residue more frequently.
