摘 要:沙门氏菌是危害畜禽生产和畜产品安全的主要病原菌,其最主要的感染途径是通过胃肠道入侵。铁是肠道沙门氏菌存活、繁殖的必需营养物质,过量的铁能增加小鼠肠上皮细胞上沙门氏菌的黏附和入侵数量。肠道上皮组织中铁的贮备对沙门氏菌感染引起的肠道免疫反应过程起着重要的调节作用;动物沙门氏菌感染也可引起机体铁的代谢紊乱。因此,本文就铁稳衡调控与动物肠道沙门氏菌感染二者间的关系研究作一综述,以期为通过营养手段防控沙门氏菌、保障畜产品安全性提供参考。Salmonella enteritidis is reported to be the most common pathogen of animal salmonellosis, which is harmful to animal production and the safety of animal products. Salmonella organisms mainly infect animals by the oral route and lead to colonization of the gastrointestinal tract. Iron is an essential nutrient for intestinal Salmonella survival and reproduction. Overload iron increases the amount of Salmonella adhered to or invaded in the small intestine. Intestinal iron status severely affects the process of intestinal immune responses against Sal monella, and vice versa. Therefore, the relationship between iron hemeostasis and intestinal Salmonella infec tion was reviewed in this paper, in order to provide references for developing some nutritional stratagems to in terrupt the process of Salmonella infection, and keep the safety of animal products.
