摘　　要：茶多酚是一种高效的复合抗氧化剂 ,其强抗氧化性与各组分之间的协同作用密切相关。茶多酚与其他抗氧化剂也存在协同作用 ,如维生素 C、维生素 E、类胡萝卜素及谷胱甘肽等。协同作用增强了茶多酚的抗氧化效果。茶多酚的协同作用是通过偶联氧化实现的。Tea polyphenols is an effective antioxidant and the partiuclar function partly results from the synergism of their own components.The synergism also appeared between tea polyphenols and other natural antioxidants,which improves the oxidative activity of tea polyphenols.The synergism and the mechanism are investigated in the present paper.
