摘 要:目的为了解人工养殖与野生滑鼠蛇蛇肉的营养成分差异。方法对养殖与野生滑鼠蛇蛇肉的营养成分进行检测(如蛋白质、脂肪、氨基酸、糖、微量元素的含量),并对两者的各项检测结果进行比较分析。结果养殖滑鼠蛇蛇肉的蛋白质、脂肪、氨基酸、糖以及矿物质元素硒、铬、镁、铜、铁、锌含量与野生滑鼠蛇相比无显著差异;养殖蛇肉的部分指标如氨基酸、丝氨酸、亮氨酸、甘氨酸、赖氨酸、丙氨酸、组氨酸、精氨酸、结氨酸含量比野生蛇含量偏高。结论养殖滑鼠蛇蛇肉与野生滑鼠蛇蛇肉的营养价值大致相同。养殖滑鼠蛇蛇肉不但嫩、香、醇,而且无致病菌及寄生虫感染,是理想的绿色营养食品。Objective In order to understand the difference between the nutritional components of meat of breed and wild snake (Ptyas mucosus). Methods The test results of breed and wild snake nutrients content such as proteins,fats,amino acids,sugars,and mineral elements were detected and analyzed. Results The proteins,fats, amino acids, sugars, and mineral elements selenium, chromium, magnesium, copper, iron, and zinc content of meat of breed snake compared with the wild snake was no significant difference;breed snake some indicators such as serine, leucine,lysine,glycine,alanine,histidine,arginine,and lysine contents higher than with wild snake. Conclusion Breed snakes and wild snake has same nutritional value;breed snake meat is not only tender and mellow,but also non-pathogenic bacteria and parasitic infections,and an ideal green nutritiou food.
