摘 要:目的应用《生活饮用水标准检验方法》(水质法)测定面制食品中铝并与《食品卫生检验方法》(食品法)进行比较。方法铬天青S分光光度法,参照GB/T 5750.6-2006《生活饮用水标准检验方法—金属指标》和GB/T 5009.182-2003《食品卫生检验方法理化部分(二)》有关规定进行。结果 2种方法具有良好的相关性,准确度和精密度一致,稳定性好,所测得的结果,经比较差异无统计学意义。结论水质法更具有试剂用量少、缓冲系统抗酸能力强、显示的颜色更稳定等优点,适用于面制食品中铝测定。[ Objective ] To apply the "Standard Test Methods of Drinking Water" (water method) and the "Test Methods of Food" (food method) to detect aluminum in flour products,and compare the results of the 2 methods of determination. [ Methods ] In accordance with the relevant regulations in the "Standard Test Methods of Drinking Water" ( GB/T 57.50. 6-2006) -metal indicator and "Test Methods of Food" ( GB/T 5009. 182-2003 ) -Physical and Chemistry Part II ,aluminum in flour products was detected by Chrome Azurol S spectrophoto- metric method. [ Results ] There was good correlation between the 2 methods,the accuracy and precision of the 2 methods were consistent, and they had fine stability., no significant difference was found between the 2 results. [ Conclusion] The "water method" presents more ad- vantages than the "food method" ,such as a little reagent dosage,buffer system of strong acidresistance, displaying color stability,therefore the "water method" method is suitable for the determination of aluminum in flour products.
