摘  要:以石榴和葡萄为原料榨汁,混合果汁经酸度和糖度调整后(添加蔗糖调整糖度,添加酒石酸和碳酸钙调整酸度),添加酵母,通过前发酵、后发酵,酿制出石榴葡萄酒。再以4.甲基.2.戊醇为内标物,建立了一种可同时测定石榴葡萄酒中甲醇和杂醇油含量的气相色谱测定方法。该方法相对标准偏差为2.1797%-3.2125%,加标回收率为95.8143%--101.9143%,具有较高的精密度和准确度。最后以该方法测定石榴葡萄酒中的甲醇和杂醇油含量,检测结果甲醇未检出,杂醇油(以异丁醇和异戊醇计)0.0228g/100mL。After primary fermentation and after fermentation, pomegranate grape wine was produced by Saccharomyces cerecisiaes fermentation, using adjusted pomegranate grape juice as material (add sugar to adjust sugar content and add tartaric acid and calcium carbonate to adjust acidity). Using 4-methyl-2-pentanol as internal standard, a precise and accurate method for determination of methanol and fusel oils in pomegranate grape wine at the same time by gas-chromatography was established (the relative standard deviation (RSD) ranged between 2.1797% and 3.2125%. The recovery rote range from 95.8143% to 101.9143%, and the result of determination reveals pomegranate grape wine was safe, the methanol was not detectable, the content of fusel oils was 0.0228g/100ml.
