摘 要:煎炸老油因为长时间与金属器皿接触,极易受到污染而溶入很多微量金属元素。对自制和采集到的煎炸老油通过HNO3-H2O2消解,采用火焰原子吸收进行Pb、Zn、Cu、Fe的检测,并与合格食用植物油做对比。结果发现,煎炸老油的Pb、Zn、Cu、Fe四种金属离子含量远高于合格食用植物油,方法加标回收率在96.85%~103.25%。此法可以作为鉴别煎炸老油及合格食用植物油的一种有效方法。Fried oils are easily polluted by a lot of trace metal elements for long time contact with metal utensils. The self-made and collected fried oils were detected by flame atomic absorption spectrometry for Pb, Zn, Cu, Fe after digestion by HNO3-H2O2, and compared with the qualified edible oils. It was found that the content of Pb, Zn, Cu, Fe four metal ions of fried oils was far higher than the qualified edible oils. The average recoveries were in 96.85%-103. 25%. This method can be used as differential fried oils and qualified edible oils.
