摘 要:近年来,地沟油是人们最为关注的食品安全问题之一。对长期食用添加地沟油食品对人体造成的危害进行总结,综述目前各种地沟油的检测方法和鉴别方法,并介绍目前国内外对地沟油的利用情况,为地沟油的鉴定检测工作的顺利开展提供参考,并指出合理利用地沟油的重要性。In recent years restaurant waste oil is one of the food safety problems which people pay close attention to. The harm to people for taking in too much food with restaurant waste oil is summarized, and the current identification and detection methods of restaurant waste oil are reviewed, and current reasonable utilizations of restaurant waste oil home and abroad are introduced. It can give the reference for restaurant waste oil's detection and identification. Meanwhile, it is also pointed out that using restaurant waste oil properly is essential.
