摘 要:以斑鸠菜叶为主要原料,添加绿茶浸泡液制备斑鸠菜保健茶饮料。通过单因素试验和正交试验确定斑鸠菜汁浸提工艺及茶饮料配方。结果表明:斑鸠菜鲜叶浸提比干燥后浸提效果好,成熟叶比嫩叶和老叶浸提效果好,鲜叶最佳浸提工艺为料水比1∶6(m∶V),浸提时间10 min,浸提温度95℃;斑鸠菜茶饮料最佳配方为斑鸠菜汁与绿茶浸泡液比例2∶1(V∶V),白砂糖含量3%,柠檬酸含量0.16%,CMC-Na含量0.12%。By taking the C. trichotomum Thunb. leaves as the main raw material, added green tea extract liquid to develop one kind of the new health beverages. The extraction conditions of vegetable juice and prod- uct formula were determined by single-factor test and orthogonal test method. Results showed that the fresh leaves extract was better than drying leaves, mature leaves extract was better than tender and old leaves. The optimum technological parameter were fresh leaves for ma- terial and liquid ratio of 1 : 6(m : V), the extraction time of 10 min, the extraction temperature of 95 ℃. The optimum formula were vegetable juice and green tea extract liquid ratio of 2 : 1(V : V), sugar of 2%, citric acid of 0.16%, CMC-Na of 0.12%.
