摘  要:目的了解县级城镇餐饮业餐具消毒效果现状,探讨基层餐饮业消毒卫生管理,提高食源性疾病防控能力。方法通过回顾性资料调查方法,对该县城镇各类餐饮经营场所、学校食堂及餐饮具消毒站的餐饮具卫生消毒质量进行了监测与分析。结果在2008-2010年共检测餐饮具5 209件,检出大肠菌群超标率为10.04%。餐饮单位规模越小,消毒质量越差,小型餐饮单位的餐饮具大肠菌群超标率达到17.43%。结论县级城镇餐饮业餐具消毒效果现状不容乐观,特别规模较小的餐饮单位需要重点加强餐饮具消毒管理和监督监测,以提高餐饮具卫生消毒水平。Objective To analyze the current status of disinfection effect of tableware in county towns of Haiyan, discuss basic disinfection hygiene management of catering industry, and improve food borne diseases prevention and control abili ty. Methods Quality of sanitary disinfection in tableware of catering establishments, school canteens and tableware disin fection station in county towns of Haiyan were monitored and analyzed by retrospective survey. Results 5 209 tableware were detected from 2008 to 2010, and coliform over standard rate was 10. 04%. Catering units scale was smaller, the dis infection quality was poorer, small catering units tableware coliform over standard rate was 17.43%. Conclusion Quality of tableware disinfection situation was not optimistic in Hail, an, especially tableare disinfection management and monito ring of small catering units needed to be strengthened to improve the health level of tableware disinfection.
