摘 要:以"临蚕6号"青蚕豆为试材,研究了不同质量浓度的壳聚糖涂膜处理对青蚕豆采后品质的影响。结果表明:在温度(1±1)℃、相对湿度85%~90%条件下冷藏7周时,1.50%壳聚糖涂膜处理的保鲜效果最显著,其果实失重率较对照低33.6%;腐烂指数较对照低54.6%;壳聚糖处理还可显著降低豆荚的呼吸强度、多酚氧化酶(PPO)及过氧化物酶(POD)活性,抑制丙二醛(MDA)含量上升,延缓果实叶绿素及维生素C含量的下降,较好地保持了果实的感官品质,从而有效延长青蚕豆的贮藏期。Taking fresh broadbean variety 'Lincan No.6' as material,the effect of different concentrations(0.00%,0.50%,1.00%,1.50% and 2.00%) of chitosan treatments on the quality of it was studied.The results showed that at cold temperature(1±1)℃,85%~90% relative humidity for 7 weeks,the fresh keeping effect of coating treatment with 1.50% chitosan was the best,and the fruit weight loss rate was 33.6% lower than CK;decay index 54.6% lower than CK;coating treatment could significantly inhibited respiratory rate,PPO and POD activities,maintained lower levels of MDA content and high levels of VC and chlorophyll contents,kept better sensory quality,thereby extending the storage life of fresh broadbean.
