摘  要:[目的]探讨超声波法提取锦灯笼色素的工艺条件,并研究色素的稳定性。[方法]以锦灯笼为材料,采用可见分光光度法测定类胡萝卜素含量,并对锦灯笼色素的提取工艺进行初步探索;同时探讨pH、金属离子、光、热、氧化剂对色素稳定性的影响。[结果]结合单因素试验和正交试验,确定提取锦灯笼类胡萝卜素的最佳工艺条件为:以丙酮石油醚混合液(1∶2)为提取剂常温下进行提取,料液比1∶20g/ml、提取功率500 W、提取时间25 min。类胡萝卜素耐高温,光、酸碱以及H2 O2对其稳定性影响较大。[结论]研究可为锦灯笼色素的提取及开发利用提供参考依据。[ Objective ] To discuss the technique of extracting Calyx seu Fructus Physalis pigments by ultrasonic-assisted method and study pigments stability. [ Method] With Calyx seu Fructus Physalis as the test material, the carotenoid content was determined by visible spectrophotometry method, the extraction process of pigment was explored ; the impacts of pH value, metal ion, light, thermal, oxidizing agent on the stability of pigment were discussed. [Result] Combined with single factor test and orthogonal test, the optimum technique was as follows: with acetone petroleum ether mixture (1:2 ) as extracting agent to extract at room temperature, the ratio of solid to liquid was 1:20 g/ml, the power was 500 W and the extracting time was 25 min. The pigment had the property of high temperature-resistance. Some factors such as light, pH, H202 could reduce the stability of pigment. [ Conclusion] The study can provide reference basis for extraction and utilization of Calyx seu Fructus Phvsalis Dizment.
