摘 要:以烤烟品种"云烟87"为材料,通过大田试验对河南省5个烟区在生育期间取样测定潜香型物质以及相关酶活性,以明确典型浓香型烤烟主要潜香型物质在大田生育期的形成规律及其与相关酶活性的关系。结果显示:酚类化合物和石油醚提取物的含量在烤烟成熟过程中总体都表现为逐渐积累的趋势,而类胡萝卜素和游离氨基酸的含量在整个生育期均缓慢下降;PPO活性在烟叶成熟期达到最高值,在整个生育期为一单峰曲线,POD活性在不同试点的变化趋势不一致,郏县和襄县试点为双峰曲线,PAL活性在烟叶成熟之前整体呈上升趋势。同时,PPO和POD活性与酚类化合物以及石油醚提取物含量为正相关,其中PPO活性与它们的相关性达到显著水平,POD活性与芸香苷和总酚含量也达到了显著水平,PAL活性与绿原酸含量达到显著水平;3种酶都与类胡萝卜素和游离氨基酸含量呈负相关。研究表明,在相同品种和栽培技术下,典型浓香型烤烟不同产区潜香型物质变化趋势基本一致,但是在不同生态条件下含量差异较为显著;PPO和POD活性对烤烟多酚类化合物的含量有显著的影响,其在生育期间活性变化对多酚类化合物的积累有较大的影响作用。Through field tests for the typical heavy - aroma - style flue - cured tobacco variety Yunyan 87, we studied the formation rule of the main latent fragrant substances in flue - cured tobacco growth period in five regions of Henan province and their relationships with the related enzyme activities. The results showed that the contents of polyphenols and petroleum ether extracts had the trend of gradual accumulation in the maturation process of flue - cured tobacco as a whole. The contents of carotenoids and free amino acids declined slowly throughout the growth period. PPO activity reached the highest value at the stage of leaf maturation, re- vealing a single - peak curve throughout the growth period. The changes of POD activity in different experimental regions were incon- sistent, and those in both Jiaxian and Xiangxian were double - peak curve. PAL activity generally showed an increasing tendency before the maturation of tobacco leaves. At the same time, the activities of PPO and POD had positive correlations with the contents of polyphenols and petroleum ether extracts, and the correlations between PPO activity and the contents of the latter two reached a significant level. The correlations between POD activity and the contents of rutin and total polyphenols reached a significant level, and the correlation between PAL activity and chlorogenic acid content also reached a significant level. There were negative correla- tions between the activities of three enzymes and the contents of carotenoids and free amino acid. Under the conditions of the same tobacco variety and euhivation techniques, the changes of latent fragrant substances in different producing areas of typical heavy - a- roma - style flue - cured tobacco had the consistent trend basically, but their contents under different ecological conditions were significantly different.
