摘　　要：随着抗生素在动物饲养过程中的普遍应用,不可避免地造成动物源性食品(牛奶、肉类、水产品、鸡蛋、蜂蜜等)中抗生素的残留,从而对人体健康造成潜在的危害。本文以动物源性食品为检测对象,论述了残留抗生素分析中常用样品前处理方法及其检测方法,并展望了前处理及检测方法的未来发展趋势。With the widely application of antibiotics in animal breeding process, there are increasing problems of antibiotic residues in animal derived food （ milk, meat, aquatic products, eggs, boney, etc. ） which cause potential harm to human health. This paper describes various classic pretreatments and analytical methods for antibiotic resi-due analysis of animal derived food and prospect the future trends.
