摘  要:建立了基于固相萃取-高效液相色谱法的面粉类食品中丙烯酰胺的检测方法,该方法的加标回收率在88.1%~93.8%之间,日内标准偏差小于2.7%,可以满足食品中丙烯酰胺测定的要求。采用该方法对市售饼干样品进行测定,结果表明,饼干中普遍存在丙烯酰胺,其含量约为WHO推荐饮用水中限值的200到800倍。A method for determining acrylamide in wheaten foods was established by solid-phase extraction coupled with high performance liquid chromatography (HPLC). The recoveries of acrylamide from spiked samples by this method were within 88. 1% ~ 93.8%, and the relative standard deviations were lower than 2. 7%. This method has the advantages of convenient operation, excellent accuracy and good reproducibility, and it is suitable for the determination of acrylamide in wheaten foods. The cracker samples obtained from markets were determined by this method, and it was shown that acrylamide contents in cracker were about 200 ~ 800 times as many as the WHO guidelines for drinking water quality.
