摘　　要：酿酒发酵过程动态监测与管理系统包括无线温度测量与数据传输、过程监视、数据存储与管理、酒曲配方管理、生产管理、数据分析、数据应用和产品信息反馈等主要环节。发酵池的温度变化表征了生物固态发酵反应器的进程，它与酿酒质量之间有着密切的关系，构建发酵池无线温度测量与分析系统，对于监视整个发酵过程并保证酒品质量将起到至关重要的作用。本文提出了对研制发酵过程动态监测与管理系统的技术要求，并着重从该系统的组成与主要部件及其功能、结构与配置以及上位计算机系统的功能等方面进行了描述。The dynamic monitoring and management system for fermentation process of wine brewing, which consists of the main parts of wireless temperature measuring and data transmission, process monitoring, data storage and data management, recipe management of distiller＇s yeast, production management, data analysis, data application and information feedback of products, etc. The temperature variation of fermentation pits characterizes the course of bioreactor of solid state fermentation, it is closely interrelated witb quality of wine brewing, the construction of wireless temperature measurement and analysis system for fermentation pits will play a crucial role in monitoring whole fermentation process and ensuring wine quality. This paper proposes the technieal requirements for developing the dynamic monitoring and management system of fermentation process with the emphasis on the descriptions in the aspects of the composition and major parts and their functions, the architecture and configuration of the system as well as the functions of the upper compnlcr system.
