摘  要:烟酸作为辅酶烟酰胺腺嘌呤二核苷酸和烟酰胺腺嘌呤二核苷酸磷酸的直接前体,参与体内脂质代谢、组织氧化呼吸及糖酵解等过程,能有效促进反刍动物瘤胃发酵产生的乙酸转化。烟酸作为降脂药物,具有全面而独特的调脂作用。烟酸通过脂肪细胞的烟酸受体(GPR109A)抑制甘油三酯(TG)分解并降低血液游离脂肪酸(FFA)水平,而在肝脏中通过抑制甘油二酯酰基转移酶2(DGAT2)活性来抑制TG和极低密度脂蛋白的合成与分泌,并进一步加速载脂蛋白B(APOB)降解等。鉴于此,烟酸可能在反刍动物的脂肪沉积等脂类代谢中起着重要调控作用,可有效改善肉质,提高产奶性能等生产指标。本文对烟酸在反刍动物脂类代谢和肉质的影响及其作用机制进行归纳总结,希望对肉牛生产实践有一定的指导作用。Nicotinic acid as a pre-product of NAD+ and NADP+ participates in many biochemical metabolisms such as lipid metabolism, tissue' s oxidation and respiratory functions as well as glycolysis. It is also very important for fatty acid synthesis from acetic acid in ruminants. Nicotinic acid had been used as a lipid lowering a- gent for a long time, with special and all-round lipid modulation, which could inhibit adipocyte triglyeride (TG) decomposition and reduce serum free fatty acid level by GPRIO9A, and could inhibit the hepatic produc- tion of TG and very low density lipoprotein by diacylglycerol acyltransferase 2 (DGAT2) , speeding up the degradation of apolipoprotein B. Therefore, nicotinic acid plays important roles in lipid metabolism and fat deposition in ruminants, and can improve the meat and milk quality or growth performance. In this paper, we summarized some effects of nicotinic acid in diets on lipid metabolism and meat quality and its mechanisms in ruminants, which might provide some useful information for production and practice.
