摘 要:从体现酒品质量的感官评价和酿酒葡萄与葡萄酒的理化指标两方面入手,运用t检验、主成分分析法、模糊c均值聚类分析、多元线性回归分别建立显著性差异检验、主成分、聚类分析、质量影响和论证等模型,并运用SPSS、Matlab7软件,得出两组评酒员的评价结果差异性和可信度,酿酒葡萄的分级,酿酒葡萄与葡萄酒的理化指标之间的联系,最后分析并论证了葡萄、葡萄酒的理化指标与葡萄酒质量的关系.This article starts from the two aspects of the physical and chemical indicators of wine, as well as wine grapes and organoleptic evaluation that reflects the quality of the wine, t - test, principal component anal- ysis and fuzzy c - means clustering analysis, multivariate linear regression are used to establish significant difference test model, principal component model, the clustering analysis model, quality influence model and demonstration model. With the help of software such as SPSS,Matlab 7, we obtains the differences and credibility in the evaluation results of two groups of wine critic, the classification of wine grapes, and analyzes the link between wine grape and the physical and chemical index of wine. At last, the paper analyzes and demonstrates the relationships among the grapes, the physical and chemical index of wine with the wine quality.
