摘 要:针对《软饮料工艺学》课程的特点,将PBL方法应用到《软饮料工艺学》教学中。应用过程为选取案例,构建情景;尝试解决问题,使学生习得知识和能力;通过学习迁移,形成认知结构;推广应用,升华教学效果。实施PBL方法教学,能够活跃课堂气氛,促进实验教学,丰富学生的科技创新活动,同时有助于进入饮料企业的毕业生尽快适用工作岗位。将PBL方法应用到《软饮料工艺学》教学中是一种行之有效的教学方法。In accordance with the features of the curriculum of"Soft Drink Technology",problem-based learning(PBL)was applied in its teaching. The applying process included 4 steps. Firstly,the cases were selected and the problematical situation was constructed. Secondly,the simulative question was solved and the students were cultured to acquire knowledge and ability. Thirdly,a good cognitive structure of "Soft Drink Technology"was formed by the transfer of learning. Finally,PBL was popularized and the teaching effect was enhanced. The results showed that the PBL pedagogy could liven up lessons,promote experimental teaching,enrich the technological innovations of students,and make the graduates in beverage enterprises fast familiarized with their jobs. The application of PBL in"Soft Drink Technology"teaching is a well-proven method.
