摘  要:对疏水碳链长度不同的烯基琥珀酸淀粉糖酯的理化性质进行了研究。结果表明,疏水碳链长度对淀粉糖酯理化性质影响显著,主要表现在当疏水链为十八烯基、十二烯基及辛烯基时,临界胶束浓度(cmc)为1.4~1.8 g·L-1,cmc时的表面张力为27~33 mN·m-1;对正辛醇的增溶能力为1.14~1.37 mL·g-1;亲水亲油平衡值为12~16,属于亲水型表面活性剂;乳化能力随疏水碳链长度增大有所增加,但乳化稳定性没有明显差异。Physicochemical properties of alkenyl succinic acid starch sugar esters with different hydrophobic carbon chain length were examined. Results showed that length of the hydrophobic carbon chain offers significant effect on physicochemical properties of the starch sugar esters. As the alkenyl carbon chain is octadecenyl, dodecenyl and octenyl group, the critical micelle concentration (cmc) is 1.4 - 1.8 g . L- 1, the surface tension at the cmc is 27 - 33 mN. m-1 , the solubilization capacity in octyl alcohol is 1.14 - 1.37 mL . g-1 and the HLB is 12 - 16. This surfactant is pertaining to the hydrophilic type. With increasing of the hydrophobic carbon chain length,the emulsifying power of the corresponding starch sugar ester increases, while the change of the emulsification stability is insignificant.
