摘 要:目的建立用电感耦合等离子体发射光谱法(inductively coupled plasma atomic emission spectrometry,ICP-AES)测定油条中铝含量。方法采用硝酸-高氯酸进行样品前处理,用ICP-AES对油条中的铝进行测定,与国标分光光度计法进行比较。结果方法的最低检出限为0.013mg/L,在0~1.0mg/L范围内呈线性关系,相关系数r=0.999913,回收率在95.0%~106.4%。经统计学检验,t=0.0299,P>0.05,表明ICP-AES法与国标方法比较结果差异无统计学意义。结论 ICP-AES测定方法与分光光度法比较,ICP-AES测定方法准确、快速、检出限低,适用于油条中铝的测定。Objective To establish the inductively coupled plasma atomic emission spectrometry (ICP- AES) method to determine aluminum content in fried bread stick. Methods The nitric acid - perchloric acid was used for sample preparation. The aluminum content in fried bread stick was determined with ICP -AES meth- od, as well as compared with national standard spectrophotometer method. Results The minimum detection limit was 0. 013mg/L, and was in linear relation at the range of 0 - 1.0mg/L. The correlation coefficient r = 0. 999 913, and the recovery rate was 95.0% - 106.4%. Through statistical analysis, t = 0. 0299, P 〉 0. 05, which showed that there was no significant difference between ICP - AES and GB method. Conclusions Compared with ICP- AES determination and spectrophotometric method, ICP- AES method was accurate, rapid and had low detection limit, which was suitable for the determination of aluminum in fried bread stick.
