复合天然抗氧化剂对鳗鱼油抗氧化作用的研究

摘　　要：研究了一种复合抗氧化剂对鳗鱼油的抗氧化效果 ,并与合成抗氧化剂及单一的天然抗氧化剂进行比较。实验结果表明 :复合天然抗氧化剂能有效延缓鱼油的氧化 ,其抗氧化作用明显优于天然混合生育酚、茶多酚及合成抗氧化剂 BHA、BHT、PG,低温使用时与In this paper,the antioxidative effect of a complex natural antioxidant (CNAO) on eel oil was studied,and was compared with synthetic antioxidants and single natural antioxdant.The results showed that CNAO could delay the oxidation of eel oil effectively and was better than natural mixed tocopherols, tea polyphenols and synthetic antioxidant such as BHA,BHT,PG.If CNAO was used at low temperature,its effect could be as good as TBHQ.
